Healthy Lactation Cookies

When I gave birth to our beautiful baby boy 10 weeks ago, I had no idea how much of a struggle breastfeeding could actually be! During those first few weeks I was looking for a lactation cookie recipe but couldn't find any that were healthy. I wanted something I could eat a lot of and not feel guilty about it! I started throwing ingredients into a bowl until I came up with the correct cookie consistency. To my surprise they turned out really good so I made them again, trying to remember how I did it the first time. By the fourth time of making them I decided to measure and write down what I did…. so here it is!


½ cup coconut oil OR unsweetened applesauce

½ cup unsweetened almond milk

1 large egg

1 tsp vanilla

⅓ cup honey

2 cups quake oats

½ cup brown rice flour (any flour would work)

1 tsp baking soda

⅓ cup ground flax

Pinch of salt

1 tsp cinnamon

½ cup coconut flakes (optional)

½ cup dark chocolate chips (optional)

¾ cup chopped dates (optional)

½ cup chopped nuts (optional)


Combine coconut oil (or applesauce), almond milk, egg, vanilla, and honey in a bowl.

In a separate bowl, mix together all remaining dry ingredients.

Mix the wet ingredients with the bowl of dry ingredients until well combined.

Refrigerate dough for 30min or up to 24hours.

Line a baking sheet with parchment paper and form dough into 16-20 balls.

Bake at 350 for 12-15min. Store in refrigerator.
